They can be added just like any other stickers such as Location or Hashtags, and you can also change the two answers from the Instagram Stories poll from Yes or No, to anything you like, maybe Pizza or Salad. Or a glazed or sprinkled donut as you can see here.

You can see the Instagram Stories poll results when you swipe up, which will include the vote count for both your options, and the names of the accounts that voted for each choice.

Also accompanying the new Instagram Stories poll are some creative tools and tweakers that can help users improve their Instagram Stories experience. A color picker for text and paintbrushes, and an alignment tool for your text and stickers.
The eyedropper icon lets you pick any color from your photo or video and use it for text or to draw using the different styles Instagram offers such as the felt pen, highlighter, and more.
iOS users have an exclusive update for themselves. “When you position text or a sticker on your photo or video, new blue lines will appear to help you center it or avoid placing it anywhere that might get covered up when someone watches your story. And when you rotate text or a sticker, new guides will also help you snap your sticker back to horizontal.” the blog post explains.
